Responsibilities

Primarily responsible for preparing, portioning, and storing meat and fish. Receives and orders meat and fish and maintains stock levels of items. Position reports to Executive Chef.

Butchers Meat: Prepares and portions meat and seafood for dish preparation; maintains par levels and communicates with all supervisors to ensure smooth production of food for guests.

Food Safety: Stores and handles food properly. Following Health Department and ServSafe requirements. Reports and documents any observed or known safety hazards, conditions, or unsafe practices and procedures to management immediately.

Maintains Proper Meat Inventory: Orders all meat and seafood for preparation of dishes; Check PDN reports and e-mails from supervisors and management daily to make sure meat and seafood is supplied for special requests from Guests and special functions or events.

Banquet Event Orders: Check BEO's daily to stay on top of items needed for upcoming special functions.

Qualifications

Minimum:
High School diploma or equivalent.

Preferred:
Associate degree or two-year equivalent specialized training or experience required.

Some Culinary Training Preferred.

ServSafe Manager Certification.
