Job Title: Bakery Apprentice (Shea Retail)

Position Type: Full-Time preferred and Part-Time available, MUST HAVE SATURDAY AND SUNDAY AVAILABILITY

Compensation: $15-$16/hour + company tip share (additionaly $2-$5/hour depending on season)

We are currently seeking full-time and part-time Bakery Apprentices to join our team. This position reports to the Production Supervisor and works closely with teammates and staff at all levels of the organization.

The Bakery Apprentice ensures operational excellence through the efficient and accurate mixing and lamination of doughs, shaping and sorting of breads and pastries, sets daily proofs, maintains facility cleanliness and organization, ensures logistical preparation, and helps support the bakehouse team. This location produces various sourdough loaves and doughs for all Proof Bread locations. 

Our ideal candidate is attentive to detail, timely, team-oriented, and flexible to work various shifts with various requirements throughout the weekly schedule, especially during weekends and holidays. 

 

Key Responsibilities, include but are not limited to : 

 Mixing Support

• Supporting lead mixers for accurate and efficient mixing of standard recipes
• Understanding order of operations and reasons behind workflow
• Tending to Harriet and our various sourdough starters
• Learning and mastering fermentation through keen observation
• Operating mixing and milling equipment
• Cleaning mixing bowls, ensuring lead mixers have everything they need in time
• Supportive tasks as needed: oiling bins, washing bins, resetting tools, folding dough, organizing workstations, etc.

Lamination & Shaping

• Operating a sheeter and understanding the various tools needed
• Understanding the importance of butter and dough temperatures
• Judging fermentation, pastry yield, and what constitutes a good lamination
• Supporting lead pastry team members, ensuring all tools are reset and ready
• Understanding the difference between our various doughs
• Working with team to efficiently shape breads and score/shape different types of pastry

Facility & Bakehouse Support

• Using computer program to execute mise en place and accurately sort for logistics
• Operating a lift gate on a refrigerated truck
• Ensuring warehouse remains clean and clear of obstacles
• Production-focused deep cleaning as assigned
• Washing dishes in Bakehouse or Production
• Organizing the walk-in according to FIFO and setting nightly proofs according to pars
• Bakehouse support as needed: providing excellent and educational customer service, being a brand ambassador, baking on the deck and rack ovens, cleaning, etc.

 

Qualifications: 

• Must produce a valid ID and food handling certification
• Must show 2 years of efficiency and team-based work
• Must be attentive to detail and a good multi-tasker, time manager, and team player
• Must work weekends and stay until all tasks are completed
• Ability to maintain a friendly attitude and push towards positive conflict resolution even when dealing with disgruntled teammates or customers
• Position may require safely operating lift gates on box trucks on occasion (training to be provided as needed)
• Should be able to lift 50 lbs without complication
• Must be able to stand for the entirety of a shift, up to 12 hours
